Starting at 11 a.m., the one-day-only collaboration between Arrington and the burger chain will feature a special menu that includes her Aisoon Burger and a special twist on Shake Shack’s classic crinkle-cut fries. Net proceeds from the collaboration will go toward the chef’s nonprofit, The Collective Identity.
Named after and inspired by her grandmother, the Aisoon Burger is a single beef patty topped with braised oxtail marmalade, griddled onions, cheese and Kewpie mayo. The kombu-scented fries are dusted with nori sea salt and served with whipped kombu butter, inspired by Arrignton’s kombu-scented potatoes, a signature item at her former Santa Monica restaurant.
“My cooking style has always been riffable, bringing global flavors and techniques from around the world to reimagine traditional dishes, so I’m excited to have this opportunity with a fan-favorite restaurant like Shake Shack,” Arrington said in a press release. “This collaboration is especially close to my heart as it pays homage to some of my favorite ingredients from cooking in my grandma’s kitchen while also supporting the next generation of young Black girls in our communities.”
